Sponge
Whip all ingredients together, except oil, for 8 min. at high speed. Target density of the batter : 40-45 gr/l. Add the oil and mix 1 min. at low speed. Take a part of the batter and add coloring to make the design using a pattern. Spread the batter at 6 mm thickness.
